Virgin coconut oil is made from fresh coconut meat, NOT copra (used for many coconut oils) and the resulting product should have a distinct taste and fragrance. Most commercial coconut oils are RBD (refined, bleached, and deodorized) and contain traces of chemicals used in processing. Oils made from copra (coconut meat left out in the sun to dry where it becomes infested with mould, bacteria and insects) have to be refined, bleached and deodorised to make them fit for human consumption. They are cheap, waxy and have no fragrance or flavour. These may or may not be hydrogenated oils. There are also many virgin coconut oil products on the market today that have a waxy texture, unpleasant fragrance and taste. These are not RBD and are therefore more expensive.
