OIL, ENZYMES AND HEAT
You may have read that coconut
oil has to be "raw" and contain enzymes to be truly beneficial to
health. This is just not true! It's not even logical.
Think about it --- raw food containing enzymes
deteriorates and spoils --- so would coconut oil.
Coconut oil that contains any appreciable
amount of enzymes would have a very short shelf life. The job of enzymes
is to break down and start the process of decomposition and enzymes in coconut
oil would cause it to do exactly that - decompose.

OIL AND HEAT
It is impossible that coconut oil never sees
any heat. Any coconut oil distributed anywhere in the world has been
heated. The hulls of the ships in which it is transported pass through the
Tropics
and those hulls frequently experience heat in excess of 60o
- 70oC
(140o
- 160 oF).
Trucks that deliver coconut oil to your home in summer (even in the UK)
consistently reach extremely high temperatures. |

Coconuts are grown at the top of tall trees in hot tropical
climates. Normal temperatures in
the Tropics frequently exceed the minimum temperature at which virgin coconut oil
remains liquid (approximately 24oC
/ 76o
F) and the oil is therefore
always liquid. Under these circumstances it generally does not
need further heating to be filled into resale containers. If the
virgin coconut oil is repackaged in colder climates (under 24oC
/ 76oF) then it must be heated to
make it liquid or bottles and jars cannot be filled. The fact is coconut oil will be heated at some time
or another before you purchase it.

If you have purchased "raw" coconut oil
that contains enzymes then you'll find that
it starts to very quickly smell bad in the container.
Coconut oil is not harmed by heating or it
wouldn't be the safest and healthiest oil to cook with.
As the Raw Food Movement becomes more and more
mainstream we'd like to add that virgin coconut oil cannot be judged the same
way as other foods. It is different --- and several of our "raw
food" customers have called to confirm that the Movement is beginning to
recognise this.
